New publication: Binding of peanut allergen Ara h 2 with Vaccinium fruit polyphenols [Food Chemistry]

Peanut allergy is a worldwide health concern. Out of all the known peanut allergens, Ara h 2 is among the most potent ones. In our new collaborative paper, we investigate the potential use of polyphenolic compounds found in cranberries and/or blueberries to bind Ara h 2 and thus attenuate the allergenic potential. We used Cheminformatics to virtually simulate the potential complexes and prioritize the most interesting ones for experimental testing. This paper is now published in the Food Chemistry journal:
